ICC100 recognizes chefs who demonstrate:
  • Mastery of technique and consistency in execution​

  • Standards-led kitchen discipline (quality, safety, repeatability)

  • Leadership, mentoring, and team development

  • Professional integrity and long-term craftsmanship

  • Ability to communicate and operate in modern, international settings (English-first readiness)

How Chefs Are Selected

ICC100 uses a standards-led process combining nomination, documentation, and review. ICC reserves the right to request additional documentation to ensure credibility and fairness.

Nominate a Chef

Step 1 — Nomination

Open nominations from employers, peers, partners, and self-nomination with references.

Step 2 — Documentation

Candidates submit professional records and work evidence (portfolio, experience, references, samples).

Step 3 — Examination

ICC conducts a structured review and verifies records through the ICC Certification Desk when applicable.
